Sweet Potato Taco Recipe
Ingredients:
2 sweet potatoes
1 can black beans
1 ripe avocado
1 lime
1 jalapeno
Cilantro
Shredded cheese
Tortillas
Salsa
Optional: Bitchin sauce (cilantro chili)
Preheat oven to 400° F. Cut up/cube sweet potatoes. Toss the sweet potatoes with olive oil and salt and pepper, and spread onto a baking sheet. Roast for 20 minutes, or until golden brown. Warm up tortillas in a frying pan on the stove, and melt cheese on top. Rinse/heat black beans. Assemble tacos with the roasted sweet potatoes, black beans, cut up avocado, cilantro, salsa, and sauce. Top it off with a squeeze of lime.
